Tomato Pie Empty Tomato Pie

A friend in Illinois sent me a recipe for a Tomato Pie that sounds delicious. I think I might try this with some of the many yellow Golden Delicious tomatoes that are ripe - I suspect that would be a very sweet pie!

Here is my first attempt. Didn't have any mozzarella and the only cheddar in the house is marbled. Used four varieties if tomatoes plus green onions and basil from the SFG. The taste test awaits.
I
UPDATE: The good news is that it passed Mrs TDs taste test. I probably should have tried to get more liquid out of the tomatoes as well because the cooked pie still has some liquid. Overall this tastes awesome. The pie tastes "rich" so I cannot eat too much at one sitting. The recipe will find a place in my recipe binder.

That looks delicious TD!  We have the pie crust baking now, and the Tomato Pie will be this afternoon in time for dinner.  My wife makes a delicious pie crust with Coconut Oil, and it will go great with this recipe.

I have made this twice this year; a great way to use up your maters!  And delish; a little bit pizza-like.

The recipe calls for 1 cup of mayonnaise. Has anyone used less, or used a substitute?

Yes, and I used like 1/3 to 1/2 cup Mayo and it was fine!  I let my tomatoes drain for probably 20 minutes.  Used a pillsbury pie crust sheet.  Did not pre-bake.  It was delicious!
