Zucchini Fritters

Zucchini Fritters
I came across this recipe for zucchini fritters on a cooking site. It won't be long before some folks will be looking for a way to use up large zucchinis. I bet these would freeze well for vacuum sealing.
Zucchini fritters:
2 big zucchini
1 onion diced
2 eggs
2 Tble baking powder
3/4- 1 c flour
Seasoning to taste + salt
Oil
Grate or food process 2 clean zucchini. I chopped long ways in half and in fourths and food processed it. Wring out with cheese cloth, towel or colander, salt and let sit for 10 mins. After 10 mins drain excess water again.
Mix in flour, both eggs beaten, diced onion, baking powder and seasoning (I under seasoned. You may need to be heavy handed- I will be the next time)
Oil the bottom of pan with about a half inch of oil on medium heat. Make loose round fritters -(I switched to an ice cream scoop halfway through). Cook for a couple minutes each side until brown!
I served with a ranch sauce!
