Butter Beans????
When I was a child, my grandmother would buy some garden fresh beans (Jackson, Mississippi) from a lady who lived nearby. They were similar to lima beans, a large bean, but the best things I had ever eaten! Most searches say that butter beans and lima beans are one and the same. However, the flavor was so much better. Was this just because they were fresh Lima beans, as opposed to dried limas? Were these likely a certain variety? I want to grow some, so any southerners who know what I am remembering may be able to help me out. Thanks in advance!

Having lived in locations from the far north (Alaska) to the deep south (Georgia and Mississippi), I would say it is a regional thing. When I planted them in the south, the were called Butter Beans, and when I planted them in the North, as here in Ohio, they were called Lima Beans. The real difference, though, is at what stage they are cooked. Lima Beans fresh from the garden, cooked in a buttery sauce, are a sweet delicious treat, and completely different from dried Lima Beans that have been boiled and taste somewhat starchy.
